some days ago I tried this delicious recipe I’ve found on chefkoch.de, published by lisi68, that I want to share with you. D. & I loved the Soup, although the Bacon Dumplings looked a bit weird… 😀 I guess my dough was a bit too soaky, so they kinda fell out of their shape while cooking. But they were still yummy.
For the soup (for 2 people) you need:
1/2 onion, chopped
50g blue cheese (e.g. Gorgonzola), crumbed
1 garlic clove
125g sour cream
200ml vegetable stock
20ml white wine
For the Dumplings:
3 slices of toast, diced
3 slices of bacon, diced
7g butter, melted
1 small egg
salt and pepper
parsley, finely chopped
For the soup, sweat the chopped onion in butter, deglaze with the wine and let it reduce (so the alcohol evaporates). Add vegetable stock, cheese, garlic and sour cream, boil it all up and let it simmer for about ten minutes. Purée with a hand-held blender.
For the dumplings mix all ingredients except the flour and let the whole thing infuse for about 15
minutes. Add the flour and mix gently. Shape little dumplings with your hands and cook them through in slightly boiling salt water (10-15 minutes, depending on the seize of the dumplings). Cut open a dumpling to see whether it is cooked through or not.
Put them in the soup and garnish with the rest of the parsley.
