Low-Carb: Meatballs Balkan Style

As I want to lose some pounds of bodyweight, I am trying to cook low-carb meals as often as possible. I love trying to cook or bake new stuff, so why not accepting the challenge of cooking low-carb with healthy and fresh ingredients? That’s why I bought several low-carb cookbooks, which inspired me a lot. D. and I loved these Balkan-style meatballs, and they were totally worth the long search we had for the “Ajvar”-paste… 😀 The following recipe is conceived for one person.

For those spicy and delicious meatballs you’ll need:
30g dryed tomatoes (in oil)
1 egg (size M)
125g minced meat
30g grated Parmesan cheese
1 tbsp freshly chopped parsley
2 tsp olive oil
salt and pepper

For the salsa you’ll need:
1/2 red onion
1/2 red chilicote
1/2 red pepper
1 tsp olive oil
150g peeled tomatoes
1 tbsp tomato purée
1 tbsp Ajvar
50ml tomato juice
1 tbsp freshly chopped basil
1 pinch of sugar
salt and tabasco sauce
toothpicks

20140124-100605.jpg20140124-100635.jpgFirst of all, drain the dried tomatoes and cut them into slices. Whisk the egg. Mix the minced meat, parmesan and the parsley. Add the tomato-slices and season with salt and peper.

Form little balls out of the meat-mixture. Put them on a plate or breadboard and put them aside.

20140124-100654.jpg20140124-100719.jpgFor the salsa, peel the onion and cut it into very small dices. Wash the

chilicote, core it and cut it into tiny rings. Wash the pepper and dice it. Heat the oil in a pan and stir-fry for a minute or two. Add the peeled tomatoes, tomato purée, Ajvar, basil and sugar. Add salt and tabasco to taste.

Purée the whole salsa with a blender.

Put the rest of the oil into a frying pan. Add the meatballs and roast them gently all around. Put a toothpick in every meatball. Pour the salsa in a small dish, serve the meatballs on a plate.

Dip the meatballs in the salsa and…. – ENJOOOOY! 😀

(I had no toothpicks at home when I tried this recipe, so I just poured the salsa in a soup plate and put the meatballs on top…)
